Hearty Chicken Noodle Soup
This hearty chicken, pasta, carrot, and parsley soup is a comforting and nutritious meal that you can whip up in less than 30 minutes. It's packed with tender chicken, vibrant carrots, and comforting pasta, all simmered together in a delicious broth, making it a perfect choice for a light lunch or dinner.
Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 medium carrots, peeled and diced
- 2 cups cooked chicken, shredded or diced (leftover roast chicken works great)
- 4 cups chicken stock
- 1 1/2 cups small pasta (such as macaroni, fusilli, or small shells)
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
- 1 tablespoon fresh parsley, chopped (plus extra for garnish)
Method:
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking for 3-4 minutes until softened and fragrant.
- Stir in the diced carrots and cook for another 2-3 minutes. Add the shredded or diced chicken and continue to sauté for another minute, allowing the flavours to meld.
- Pour in the chicken stock, bring the mixture to a boil, and then reduce the heat to a simmer. Add the dried thyme and a pinch of salt and pepper. Let the soup simmer for 5 minutes to allow the carrots to soften.
- Add the pasta to the pot and cook according to the package instructions (usually around 8-10 minutes). Stir occasionally to prevent sticking. If you're using smaller pasta, check for doneness a little earlier.
- Once the pasta is cooked, stir in the chopped fresh parsley. Taste and adjust seasoning with additional salt, pepper, and a squeeze of lemon juice (optional) for brightness.
- Ladle the soup into bowls and garnish with extra parsley for colour and freshness. Serve hot and enjoy!
