Raspberry Froyo Sandwich

Servings: Approx 15 Sandwiches
Ingredients:
- 2 cups Greek Yoghurt (discarding any liquid if possible, this will make the froyo creamier)
- 1/3 cup Maple Syrup
- 1 tsp Vanilla Extract
- 3 punnets Fresh Raspberries, half lightly mashed
- 2 packets (30 biscuits) of your favourite sweet biscuit
Method:
- In a large bowl, combine Greek yoghurt, maple syrup, vanilla and raspberries.
- In your Décor container, place your biscuits (plain side facing upwards) in rows until the base of the container is lined with biscuits.
- Pour in yoghurt mixture and use a spatula to smooth out.
- Place remaining biscuits (plain side downwards) on top of yoghurt until the yoghurt is covered.
- Place in the freezer and allow to freeze for a few hours or overnight.
- Remove from freezer, press out of container (you may need to wait for it to soften for a few minutes), chop Froyo sandwiches by cutting around the cookie.
- Enjoy right away or allow to melt slightly.
