Pea & Parmesan Risotto

Who knew that one pot microwave risotto existed?! Here it is, the easiest dinner recipe and not only is it delicious but you will save on washing up as well thanks to our microwave rice cooker! 

Servings: 4

Ingredients:
2 cups Arborio Rice, rinsed
4 cups Vegetable Stock 
1 Garlic Clove, finely minced
1 tsp Oregano 
1 tsp Thyme 
¼ tsp Salt
Pinch Pepper
1 cup Green Peas
½ cup Parmesan Cheese, grated

To Serve
2 Spring Onions, finely chopped
1 Lime, juiced
2 tbsp Butter
Fresh Thyme 
Extra Parmesan, grated

Method:
1. Add rice, vegetable stock, garlic, oregano, thyme, salt and pepper to the container. Give the ingredients a stir and place in the microwave without the lid for 10 minutes. 
2. Stir through peas and parmesan and place back in the microwave for a further 4 minutes. 
3. Place the lid on the container with the vent open and allow to sit for 5 minutes. 
4. Stir through spring onion, lime and butter. Sprinkle with thyme and parmesan upon serving.
