Rainbow Cake

Get ready to create a show-stopping, party-perfect rainbow cake that’s as fun to make as it is to eat! With soft pastel layers, fluffy whipped cream, and a generous sprinkle finish, this step-by-step guide will have you whipping up an Insta-worthy dessert in no time. This delicious sprinkle covered layered rainbow cake is perfect for birthdays, celebrations, or just because!

Ingredients | Servings: 10

  • 4 cups Plain Flour
  • 2 cups Caster Sugar 
  • ½ tsp Salt
  • 3 tsp Baking Powder
  • 5 Eggs, whisked
  • 1 cup Olive Oil
  • 1 cup Milk
  • 2 tsp Vanilla Extract
  • Food Colouring for Four Layers (follow packet for quantity) We used Pink, Purple, Yellow and Green
  • Whipped Cream
  • Sprinkles


Method:

  1. Preheat oven to 170 degrees and line a cake tin (use multiple tins the same size if you have them or you will need to cook layer by layer separately in the same tin). 
  2. Combine plain flour, caster sugar, salt and baking powder in a bowl or stand mixer. 
  3. In a separate bowl, whisk eggs, olive oil, milk and vanilla. 
  4. Slowly pour wet ingredients into dry and stir/mix to combine. 
  5. Divide mixture into four separate bowls. Add food colouring to each bowl, add multiple drops to darken colour as you desire. Mix to combine. 
  6. Pour mixture into cake tin (or multiple tins) and bake for 10-15 minutes (you may need longer/shorter depending on your cake tin size) or until a skewer comes out clean. Allow to completely cool. Repeat this process until the four cake layers are cooked. 
  7. Trim the top of each cake to create a flat surface. 
  8. To assemble cake, add whipped cream on top of each cake layer. Use remaining cream to smooth around the outside of the cake and add sprinkles on top of cake.
