Rainbow Cake

Ingredients | Servings: 10
- 4 cups Plain Flour
- 2 cups Caster Sugar
- ½ tsp Salt
- 3 tsp Baking Powder
- 5 Eggs, whisked
- 1 cup Olive Oil
- 1 cup Milk
- 2 tsp Vanilla Extract
- Food Colouring for Four Layers (follow packet for quantity) We used Pink, Purple, Yellow and Green
- Whipped Cream
- Sprinkles
Method:
- Preheat oven to 170 degrees and line a cake tin (use multiple tins the same size if you have them or you will need to cook layer by layer separately in the same tin).
- Combine plain flour, caster sugar, salt and baking powder in a bowl or stand mixer.
- In a separate bowl, whisk eggs, olive oil, milk and vanilla.
- Slowly pour wet ingredients into dry and stir/mix to combine.
- Divide mixture into four separate bowls. Add food colouring to each bowl, add multiple drops to darken colour as you desire. Mix to combine.
- Pour mixture into cake tin (or multiple tins) and bake for 10-15 minutes (you may need longer/shorter depending on your cake tin size) or until a skewer comes out clean. Allow to completely cool. Repeat this process until the four cake layers are cooked.
- Trim the top of each cake to create a flat surface.
- To assemble cake, add whipped cream on top of each cake layer. Use remaining cream to smooth around the outside of the cake and add sprinkles on top of cake.
