Spicy Sweet Potato Soup
Ingredients
- 1L (4 cups) stock
- 2 tsp oil
- 1 large finely chopped brown onion
- 1 tbsp red curry paste
- 2 carrots, peeled and sliced thickly
- 750g sweet potato, peeled and coarsely chopped
- 2 tsp lime juice
- 1/2 tsp brown sugar
- 90g sour cream
- 1 fresh long red chilli, chopped finely
- 1 tbsp fresh coriander chopped
Method
- Heat oil in a large saucepan over medium heat. Cook onion for approx. 5 minutes or until soft. Stir in curry paste for 1-2 minutes or until aromatic.
- Add sweet potato, carrot and stock. Bring to the boil. Reduce heat to low. Simmer for 25-30 minutes or until tender. Cool slightly.
- Blend the soup mixture until smooth. Heat over low heat for 2-3 minutes. Stir in the lime juice and brown sugar. Season to your liking.
- Serve with sour cream, sliced chilli and coriander.
