Summer salad recipe

Ingredients:

Dressing: 

  • ¼ cup olive oil 
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 2 cloves garlic minced
  • salt and pepper to taste

Salad:

  • 4 cups cucumber, sliced lengthways and cut into semi circles
  • 1 shallot, sliced
  • ¼ cup of dill
  • ½ cup of feta cheese crumbled


Method:

  • Place the preprepared cucumbers, shallot, dill and feta cheese in a large bowl.
  • Place the olive oil, red wine vinegar, lemon juice, garlic and salt and pepper in a jug. Whisk until combined. Pour the dressing over the vegetables and toss gently to coat. Serve.
