Taco Bowls

Taco Bowls – Lunch Prep
Ingredients
- 1 cup rice
- 3 tbsp taco seasoning
- 500g pork mince
- 420g can corn kernels
- ½ red capsicum
- ½ green capsicum
- Handful cherry tomatoes
- 420g canned black beans
- Handful fresh coriander
- 1 lime
- ¼ tsp turmeric
- ¼ tsp chicken stock powder
- salt
- white pepper
- olive oil
Method:
- Cut lime into wedges
- Slice capsicums into thin strips
- Drain the liquid from the corn kernels & black beans. Rinse black beans to remove residue
- Cut tomatoes into halves
- Cook rice as per packet instructions
- Add turmeric & stock to the water.
- Once cooked, set aside.
- In a large fry pan, medium – high heat, drizzle olive oil, and add pork mince & taco seasoning.
- Cook, breaking up with a spatula, until pork has browned & mostly cooked through.
- Remove from pan.
- In same pan, add another drizzle of olive oil, add capsicums, and cook until slightly charred. Remove from pan.
- In same pan, add corn kernels. Cook until stars to char, and remove from pan. Remove from pan.
- In your Tellfresh containers, assemble the taco bowls, but dividing the rice between each, topping with the pork mince, followed by each element: black beans, capsicum, corn kernels, tomatoes, fresh coriander and lime.
