Taco Bowls

Taco Bowls – Lunch Prep 

 

Ingredients 

  • 1 cup rice  
  • 3 tbsp taco seasoning  
  • 500g pork mince  
  • 420g can corn kernels  
  • ½ red capsicum  
  • ½ green capsicum  
  • Handful cherry tomatoes  
  • 420g canned black beans  
  • Handful fresh coriander  
  • 1 lime
  • ¼ tsp turmeric 
  • ¼ tsp chicken stock powder
  • salt
  • white pepper
  • olive oil  


Method:  


  1. Cut lime into wedges 
  2. Slice capsicums into thin strips 
  3. Drain the liquid from the corn kernels & black beans. Rinse black beans to remove residue 
  4. Cut tomatoes into halves 
  5. Cook rice as per packet instructions
  6. Add turmeric & stock to the water. 
  7. Once cooked, set aside.  
  8. In a large fry pan, medium – high heat,  drizzle olive oil, and add pork mince & taco seasoning. 
  9. Cook, breaking up with a spatula, until pork has browned & mostly cooked through. 
  10. Remove from pan.  
  11. In same pan, add another drizzle of olive oil, add capsicums, and cook until slightly charred. Remove from pan.  
  12. In same pan, add corn kernels. Cook until stars to char, and remove from pan. Remove from pan.  
  13. In your Tellfresh containers, assemble the taco bowls, but dividing the rice between each, topping with the pork mince, followed by each element: black beans, capsicum, corn kernels, tomatoes, fresh coriander and lime.  


TOP TIP: Using all the same sized Telfresh containers make it easier to stack and store in your fridge. Simply grab and go on your way out the door!
