Veg Packed Rice

Looking for a flavourful and easy one-pot meal? This vibrant rice dish combines tender grains, hearty black beans, and colourful steamed vegetables, all seasoned with bold spices for a deliciously satisfying bite. Perfect for a quick weeknight dinner or a crowd-pleasing side, this recipe is sure to become a favourite!


SERVES 4


Ingredients:

  • 2 cups Medium Grain White Rice 4 cups Vegetable Stock 
  • 1 Garlic Clove, finely minced
  • 1 tsp Cumin 
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • ¼ tsp Cayenne Pepper
  • ¼ tsp Salt
  • Pinch Pepper
  • ¼ Red Capsicum, diced
  • ¼ Yellow Capsicum, diced
  • 1 Tomato, diced 
  • ½ cup Corn Kernels 
  • ½ cup Green Peas
  • 1 x 400g can Black Beans 

To Serve

  • Fresh Lime 
  • Coriander Leaves


Method:

  1. Add rice, vegetable stock, garlic, cumin, onion powder, paprika, cayenne pepper, salt and pepper to the Microsafe Rice Cooker. Give the ingredients a stir and place in the microwave without the lid for 10 minutes.
  2. Place back in the microwave for a further 7 minutes or until liquid is absorbed.
  3. Place the lid on the container with the vent open and allow to sit for 5 minutes.
  4. Add ½ cup water to Decor Vegetable Steamer and add capsicums, tomato, corn and green peas. Microwave for 4 minutes to steam vegetables.
  5. Add the vegetables and black beans to the cooked rice. Serve with fresh lime and coriander leaves.
